Wonton Soup

Make Wonton Soup as an appetizer or as a main course for any Asian or Chinese Theme Party. If serving as an appetizer, serve in small portions. As a main meal, often vegetables, char sui pork (Chinese Barbeque Pork) and rice noodles can accompany the wonton to complete meal. |

Wonton Soup Ingredients :
- 60 Wonton Wrappers
- 2 cups of chopped shrimp
- 1 lb. of ground meat, like pork or turkey
- 1/4 cup finely chopped green onion
- 1 egg white
- 2 tsp soya sauce
- 2 tsp hoisin sauce
- 1 tbs rice wine vinegar
- 1 tsp sugar
- 1 tsp fresh ginger grated finely
- salt
- pepper
- 2 cups Pea pod stem vegetable
- 6 cups of Broth or Soup

- Chop the shrimp in to fine pieces using a cleaver. It does not have to be super fine.
- Mix together ground meat, onion, sugar, ginger, soya and hoisin sauce. Mix in a food processor until finely blended into a paste.
- Take the meat mixture out of the food processor and fold in the shrimp.
- Wrap the wonton by holding the square wrapper diagonally in your hand. Place the meat in the center of the square wonton wrapper. Fold over into a triangle.
- Dip finger in egg white and dab a small amount on one corner of the triangle. Fold and knead both corners together. If I am in a hurry I will usually not bother kneading the corners together and leave the wontons in a triangle.
- Boil 4 quarts of water in large pot.
- When the water comes to a rolling boil, put the wontons gently in. Let cook for about 5 minutes or until the wontons “float” to the surface. This will let you know that they are cooked.
- Drain the wontons and rinse in cool water. Discard the hot water.
- To make the soup, boil the broth or chicken soup. When the soup comes to a rolling boil, add the Pea Pod Stem. Let cook for about 5 minutes.
- Spoon hot soup over wontons and serve with Chinese Yok Fun dipping sauce.
Clean and devein shrimp. Chop coarsely using cleaver or knife.
Place shrimp paste in center of a diagonal wonton wrapper.
Fold over wonton wrapper to form a triangle.
Dab a little egg white in one corner of the triangle wrapper, and knead together to form a wonton.
