Wild Rice Pilaf with Cranberries and Pine Nuts Ingredients:
- 1 cup wild rice (about 6 ounces)
- 2 cups short-grain brown rice
- 3/4 cup dried cranberries
- 4 tbs butter ( or 1/2 stick)
- 2 medium carrots, diced finely
- 1 medium celery stalk, diced finely
- 1 small fennel bulb, trimmed and diced finely
- 1 medium onion, diced
- 1 1/2 tsp chopped fresh thyme leaves
- 1 can chicken broth organic
- 3/4 tsp salt
- 1/4 fresh ground black pepper
- 1 cup pine nuts
- 1 tbs olive oil
- fresh thyme for garnish
- fresh slices of oranges for garnish
- fresh greens for garnish
Wild Rice Pilaf with Cranberries and Pine Nuts Instructions:
- Combine the 1 cup wild rice and 2 cups brown rice in a bowl and rinse in water. Drain. In a 3-quart saucepan, heat the rice, 4 cups of water, and chicken broth to boiling over high heat.
- Reduce heat to low; cover and simmer 40 minutes until rice is tender and done.
- In a 5-quart Dutch oven, melt the butter over medium-high heat. Add carrots, celery, fennel, onion and cranberries and cook until all vegetables are tender and lightly browned. Stir in thyme and cook one minute longer.
- Add in the rice mixture, and some salt, pepper, and heat through.
- Toast pine nuts in a shallow pan with 1 tbs olive oil. Toast until brown. Let cool.
- Spoon rice mixture onto serving dish and top with pine nuts. Decorate with slices of oranges, fresh thyme and greens.

Step 3. Saute diced onions, carrots, fennel, and celery until golden brown. Add in cranberries.

Step 5. Toast pine nuts in a pan until nice and brown.

Step 6. Spoon rice mixture on a serving dish and sprinkle pine nuts on top.
