Valentine Mini Valentine Cupcake Pops:
- 1 baked cake, chocolate flavor.
- 8 oz. of cream cheese.
- Mini flower cookie cutter
- White icing.
- Lollipop Sticks
- Wilton Valentine Sprinkles
- Jumbo Red Heart Sprinkles
- Red satin ribbon.

Valentine Mini Valentine Cupcake Pops Directions:
Step 1. Put cooled cake in a food processor and process until it becomes a fine crumble.

Step 2. Add softened cream cheese to the crumbs and mix well using the back of a spoon. Roll mixture with your hands into small balls about 1.5″ in diameter. Cover with plastic wrap and chill for a few hours in your refrigerator.
Tip: Rolling the balls will be easier if your hands are dry. If cake mixture sticks to your hands, just wash and dry. It also helps to rub some vegetable oil on your hands.

Step 3. Remove cake balls from refrigerator. Take a ball and use a mini flower cookie cutter to shape the ball by rolling the ball into an long oblong shape first, and then sliding it through the cookie cutter
. Push on both sides so the cake mixture fills the entire space and gets molded into the shape. Let the top stick out in the shape of a muffin top. Push the shaped cupcake out of the cookie cutter, set aside on a cookie sheet. Continue until all balls are shaped.
Step 4. Cover the shaped mini cupcakes and put in the freezer to harden, about 5-10 minutes.
Note: You can leave them covered in the refrigerator overnight if you want to do the dipping on the following day.

Step 5. Melt red candy melts by using the double boiler or microwave method as shown on the package.
Note: Do not overheat the candy melts or chocolate otherwise the candy melts will not melt properly and will have a granular, paste-like consistency.
Step 6. Dip the bottom of the cupcake into the red candy melt. Place on wax paper upside down to dry. Stick a lollipop stick in if you want to make cupcake pops or leave as is to make mini cupcake petit fours, or cupcake bites. Let dry completely (10-15 minutes).

Step 7. Use white icing to decorate and fill the top. Sprinkle Valentine Sprinkles on top, and finish off with a Jumbo Red Heart Sprinkle in the middle.
Step 8. If you will be giving them away as favors or as a Valentine’s gift, cover with plastic cellophane bags, then tie with a pretty red bow.
