Stir Fry Noodles

This easy and versatile stir fry noodles dish can be served at Luau parties or Asian-themed parties, and guaranteed to be a favorite among all, especially kids. The dish combines sweet and salty flavors with a bit of spiciness, and calls for ingredients that can be purchased at your local grocery store, from Asian specialty stores, or online. If no egg noodles are available, just simply substitute regular spaghetti noodles instead. |

Stir Fry Oyster Sauce Noodles : Ingredients
- 9 oz. egg noodles or regular spaghetti noodles
- 1 lb. boneless chicken thighs
- 2 tbs. oil
- 1 cup of mixed frozen vegetables, corn, peas and carrots
- 2 eggs
- 2 tbs. oyster sauce
- 1 tsp. curry powder (adjust for spiciness)
- 1 tbs. garlic powder
- 1 tsp. sugar
- 1 tsp. Ketjap Manis (optional)
- 3 tbs cold water
- Fresh Parsley (cut up)

Stir Fry Oyster Sauce Noodles : Directions

Step 1. Put the egg noodles into a large bowl or dish. Pour over enough boiling water to cover and let stand for 10 minutes. (If you are using spaghetti noodles, just cook according to directions on the package).
Step 2. Meanwhile, cut the chicken into small pieces with a knife.
Step 3. Heat a large skillet or wok over high heat and add the oil.
Step 4. When the oil is hot, add the chicken and stir fry lightly. Add mixed vegetables and cook for about 5 minutes.

Step 5. Drain noodles and add to the wok with the chicken. Cook for 3 minutes until noodles are heated through.
Step 6. Beat the eggs in a small bowl. Heat a small skillet over medium heat and add 1 tablespoon of oil. Add the egg mixture to the skillet and let it cook for about 1 minute to form an omelet. Flip omelet over and cook the other side. When the omelet is cooked place onto a cutting board and cut into small pieces. Set aside.

Step 7. Add the oyster sauce, 1 teaspoon curry powder, 1 tablespoon garlic powder, 1 teaspoon sugar and 3 tablespoons of cold water to the noodles. Stir fry for 5 minutes. Top with the egg pieces and sprinkle with parsley flakes. Enjoy!
Serve at Luau parties or Asian themed parties. A great twist to the good old pasta dishes and an easy make-ahead option for all parties. A guaranteed favorite for kids!
