Appetizers – Scallops Bacon and Mussels Kebabs

These delightfully crispy seafood skewers are an easy pick-up appetizer for any theme party like Super Bowl Football Party or Wine Tasting Party.  Serve with hot toast spread with a spread of fresh herb butter.

Scallops Bacon and Mussels Kebabs Ingredients

  • 32 small scallops
  • 24 large mussels
  • 8 pieces of bacon
  • 1 cup fresh breadcrumbs
  • 1/4 cup olive oil
  • salt and pepper to taste
Herbed Toast
  • 5 tablespoon butter, room temperature
  • 2 tablespoon minced fresh parsley
  • 1 tablespoon lemon juice
  • hot toast (crustless)

Temperature

  • Oven: Low Broil.

Step 1. Cook the scallops in their own liquor in a small pan until they begin to shrink. Drain the scallops well and then pat dry with paper towels.  Scrub the mussels and remove their beards, then rinse under cold water.  Place in a large pan with about 1 inch of water.  Cover tightly and steam over medium heat for about 5 minutes.  Cool mussels and remove from shells.

Step 2. Take 8 wooden skewers and thread on each one by alternating scallops, mussels and bacon.  As you are doing this, weave the bacon between the scallops and mussels.  Brush with olive oil.blank line divider

Step 3. Preheat the grill or broiler.  Spread breadcrumbs on a plate and roll the skewers in the crumbs.  Place on baking sheet.

Step 4. Grill for 5 minutes on each side until crisp and lightly browned.  Serve immediately with hot toast and flavored butter.

Flavored Butter
Combine butter with the minced herbs and lemon juice in a small bowl.  Season with salt and pepper to taste.

Toast bread in toaster on medium.  Cut off crusts and cut into mini triangles.
