Roast Pork with Sweet Glaze

Pork with sweet mustard glaze
Delicious Roast Pork Recipe with a sweet glaze made from maple syrup and mustard.  Serve with side dish of Potato Pancakes for an Oktoberfest Party party.

Tip: A meat thermometer is a must for this recipe to figure out if your pork is done or not.  Insert the thermometer into the middle of the meat.  When it reaches 160 F your roast is ready.

Roast Pork with Sweet Glaze Ingredients (serves 6)

  • 2-3 pounds boneless pork loin roast
  • 1 cup maple syrup
  • 4 tablespoons prepared Dijon-style mustard
  • 3 tablespoons vinegar
  • 3 tablespoons soy sauce
  • dash of salt to taste
  • Meat Thermometer

Pork rub:

  • 1/8 tsp ground black pepper
  • 1 tsp coarse sea salt
  • 1 tsp garlic powder

Roast Pork with Sweet Glaze Directions (serves 4)

Step 1. Supplies needed – pork loin, maple syrup, vinegar, mustard, soya sauce, salt, pepper, and garli powder.

Step 2. Wash and dry pork loin.  Score the rind in a cross-hatch fashion.  Preheat oven to 350 F.

Step 3. Mix the salt, pepper and garlic powder to make a rub.  Rub onto the rind and meat.  Place onto roasting rack.  Place in hot oven and roast at 350 F for one hour.

Step 4. In a small sauce pan, add maple syrup, soya sauce, mustard and vinegar.  Use a whisk to mix the glaze.  Boil over medium heat and reduce to about half the volume.  This will take a while and be careful that the glaze does not boil over.  This happened to me twice as I was busy doing other things!  It took about 1 hour to reduce the glaze and for it to thicken.

Step 5. After about an hour, start glazing the pork.  Brush on the glaze every 15 minutes.  Use of a meat thermometer is essential to figure out if your pork is done.  It will be done if the inner temperature reaches 160 F.  For my pork, it took about 3 hours for a 3 1/2 pound pork loin.

Step 6. Slice pork into thin slices and scoop some of the glaze sauce on top.  This turned out very good and my kids loved it.  We served it with sides of potato latkes, steamed beets, and roasted carrots.
