Potato Pancakes or Latkes

Make Potato Pancakes are a staple in German, Jewish and other European diets and can be eaten at dinners, breakfast and even as a snack. This delicious recipe is made without onion but has lots of taste and is great for example, with pork for an Oktoberfest Party party or for a Hanukkah Celebration. |

Potato Pancakes Ingredients (serves 4)
- 1 egg
- 1 tablespoon all-purpose flour
- 1/8 teaspoon baking powder
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 3 medium potatoes, peeled and shredded
- 2 tablespoons vegetable oil

Potato Pancakes Directions (serves 4)

Step 1. Shred the potatoes and place in a strainer. Squeeze out excess water by taking a bunch of the shredded potatoes in your hands and squeezing. Continue with the entire batch until all excess water has been squeezed out. In a separate bowl, mix flour, baking powder, salt, and pepper. Add in the egg. Beat in until mixture is mixed well. Add in the shredded potatoes and use your hand to mix.

Step 2. Shape the shredded potato mixture into patties and fry in oil until brown on both sides.

Step 3. Take potato pancake latkes out of pan and drain on paper towel. Serve while warm.
