Owl Birthday Cake: Directions

Step 1. Start off with a chocolate ganache cake or any regular cake covered with chocolate ganache or icing.
Let the cake set and icing harden. If you are using a ganache, the chocolate will not harden but form a soft shell.

Step 2. Tint a small piece of fondant brown using red, yellow and black coloring gel. Use a toothpick to add more color to the fondant. Knead to mix in the colors thoroughly. Keep on adding coloring gel until the fondant resembles chocolate. Using small half moon cookie cutter, cut out the fondant scalloped pieces.

Step 3. Add the scalloped fondant to the edge of the cake and pipe the border with chocolate icing.

Step 4. With the flower and leave cutters, cut out flower petals out of pink and yellow fondant for the flowers. Cut out green shaped leaves with the leaf cutter.

Step 5. To make flowers, follow direction for making hibiscus flowers. Make pink, yellow and white flowers. You will need 3 flower petals per flower, one of each size – small, medium and large. So for 6 large flowers you will need 6 times the number of petals. I made 2 pink, 2 white and 2 yellow flowers. Place flower cutouts in small containers, cups, etc. and let dry for a few hours until hard.

Step 6. To finish making the flowers, stick the layers together with small dabs of icing. Stick a pair of stamens in the center. Let dry completely.

Step 7. Color some fondant green and cut out various leaves using the leaf cutter. Use flower tool set to create ridge in the center of the leaves and to thin out the edges with the ball tool tip. Let dry.

Step 8. Let flowers dry and harden for a few hours. The picture above is the work-in-progress of the entire process.

Step 9. Make owl truffles ahead of time or make them at this point. Love these owls! They are too cute! They taste great too since they are made of delicious Lindt chocolates. For complete instructions go to the chocolate owl truffle page.

Step 10. Place several large flowers in the back of the cake and place an owl chocolate truffle in front.

Step 11. Add in flowers in several spots together with a few mock branches made out of sugar paste and wire.
