Mozzarella and Tomato Skewers

Make these colorful Tomato Mozzarella kebabs as appetizers for any adult or kids party. Easy to pick up for kids and adults, and delicious yet light. Make ahead of time and store in the fridge. Right before serving, pop in the oven for a quick warming and to lightly melt the cheese. |
Mozzarella Tomato Skewer Ingredients:
- 12 slices white bread
- 3 tbsp olive oil
- 4 oz mozzarella cheese cut into 1/4 inch (or 5 mm) slices
- 3 ripe plum tomatoes, cut into 1/4 inch (or 5 mm) slices
- 1/2 cup of basil leaves, or a small bunch
- salt and ground black pepper
- wooden skewers
Mozzarella Tomato Skewer Instructions:
- Stack the bread slices on top of each other. Slice off the crusts. Then cut into fourths.
- Brush bread with some of the olive oil. Toast in oven for 425F (220C) for 5 minutes or until they are golden brown.
- Make a stack by starting off with a leaf of basil, bread, cheese, tomato, bread, and then lastly, with another leaf of basil. Use a skewer and push through all layers. Place on a serving platter. Repeat with rest of the ingredients.
- Drizzle with remaining olive oil and serve.

Cut up bread into squares and brush with olive oil. Toast in oven lightly.

Cut up tomato and fresh mozzarella into 1/4 inch ( or 5 mm) thick slices. Then stack the basil, bread, cheese, tomato, bread and another basil leaf. Insert skewer through stack.

Finally, drizzle olive oil on top and serve. Make this ahead and keep in the fridge. Right before serving, warm in the oven for 15 min until cheese begins to melt. Serve.
