Mini Ciabatta Pizza Appetizer

These quick mini ciabatta pizzas are colorful with their bright roasted pepper topping and makes a great appetizer or snack that both kids and adult will love. Serve at an Italian Themed Party or as an hors d’oeuvre at a Wine Tasting Party, or just as an after school snack for kids. The ideas are endless for this versatile mini pizza! |
Supplies needed for The Mini Ciabatta Pizza (8)
- 1 loaf Ciabatta Bread
- 8 slices of prosciutto ham
- 2 yellow bell peppers
- 2 red bell peppers
- 5 oz of fresh mozzarella cheese
- basil leaves
- Olive oil

Mini Ciabatta Pizzas – Instructions
Step 1. Preheat a oven and turn on to broil. Brush the peppers with olive oil and grill the peppers, skin side up until they start turning black. Place them in a bowl, cover and leave for 10 minutes. This will help make it easier for the skin of the pepper to come off. After 10 minutes, uncover and peel off the skins of the peppers.
Step 2. Cut the bread into two inch thick slices and toast in a toaster or oven.
Step 3. Cut the peppers into thick strips and layer on top of the bread with the ham. Slice the cheese and layer on top of the bread.

Step 4. Place on a baking sheet and place sheet under a hot grill for 2-3 minutes until the cheese is bubbly. I placed the bread on foil first since it helps with clean-up.
Step 5. Place fresh basil leaves on top or on the side as garnish (optional). Sprinkle with black pepper. No salt is needed since the prosciutto ham is quite salty.
