Mexican Lasagne

Mexican Lasagne topped with Sour Cream for a Mexican Theme Party or Cinco de Mayo
Make delicious Mexican Lasagne for a Mexican Theme Party for a birthday, shower or Cinco de Mayo Party.  This recipe is so easy, delicious and can be made ahead of time.  Keep warm in the oven until ready to serve with extra sour cream and salsa on the side.

Mexican Lasagne Ingredients (serves 4-6)

  • 1 pound lean ground beef
  • 1 (1 ounce) package taco seasoning mix
  • 1 (14 ounce) can peeled and diced tomatoes with juice
  • 10 (6 inch) corn tortillas
  • 1 can refried beans
  • 1 cup prepared salsa
  • 1/2 cup shredded Colby cheese or Mexican Mixed Cheese
  • Sour cream

Mexican Lasagne Directions

Step 1. Preheat oven to 350 degrees F (175 degrees C). In a large skillet over medium-high heat, brown the ground beef, and stir in the taco seasoning and tomatoes.

Step 2. Spray baking dish with non-stick spray or grease with oil. Line the pan with one layer of corn tortillas.

Step 3. Spoon the refried beans on to the corn tortillas.

Step 4. Top with the beef mixture, cheese and salsa.  Continuing layering the pan with the same ingredients – corn tortillas, refried beans, beef, cheese and salsa.

Step 5. For the last layer, only spread salsa over the tortillas and sprinkle with the cheese. Bake at 350 degrees F (175 degrees C) for 20 to 30 minutes, or until cheese is melted and bubbly.

Step 6. Take Mexican Lasagne out of the oven and let cool for 15 minutes.  Serve with dollops of sour cream and extra salsa on the side.
