Marinated Feta Cheese with Olives and Roasted Peppers

These cute mini Feta Olives and Peppers skewers are great appetizers for a Greek Theme Party, as an hors d’oeuvre at a Wine Tasting Party, or for any party where you need a quick simple appetizer. They already look and taste good if all you have in your house are olives and peppers, or add a third element like feta cubes or pickled onions for a wider range of tastes! |
Supplies needed for Marinated Feta Cheese with Olives and Roasted Peppers (Serves 10-12)
- 1 lemon
- 1/2 tsp chopped fresh thyme leaves
- 2 jars roasted peppers
- 2-3 oz. jar of green olives
- 1 jar of 3 oz. pickled onions (optional)
- 12 oz. block of feta
- 1/4 cup Olive oil
- salt
- pepper

Marinated Feta Cheese with Olives and Roasted Peppers
- Instructions
Step 1. Grate enough lemon zest to get 1/4 tsp of zest. Use the lemon and squeeze out about 2 Tbs. of lemon juice. Put zest in the lemon juice.
Step 2. To make the vinaigrette, whisk in the olive oil, scallion, thyme, chile, and salt and pepper to taste. Let vinaigrette sit for at least 20 minutes.
Step 3. Cut the peppers into thick strips and fold over in half. Spear into a toothpick, followed by an olive, cube of feta cheese or onion. Set the pick in a shallow serving dish. Repeat with all remaining ingredients. Keep in the refrigerator until ready to serve.
Step 4. About 30 minutes before serving, mix the vinaigrette well and pour over the olive picks. Serve.
