Try this Louisiana Jambalaya dish for your next Mardi Gras Party.  The spiciness of the andouille sausages and the saffron gives this dish a nice bite and its beautiful color.  This dish is a meal in itself with chicken, shrimp, sausages, vegetables and a starch all combined into one skillet.

Mardi Gras Jambalaya Recipe Ingredients

  • 1 chicken, cut into pieces (2 – 3 lb)
  • vegetable oil
  • 1 onion, chopped fine
  • 1 green bell pepper, chopped fine
  • 1 stalk celery, chopped fine
  • 1/2 tsp saffron threads
  • 2 tbs hot water
  • 1 cup hot chicken broth or stock
  • 1/2 tsp thyme leaves
  • 1/8 tsp red cayenne pepper
  • 1/2 tsp salt
  • 2 cup long-grain basmati rice
  • 1 cup fresh or frozen peas
  • 2 large andouile sausages, sliced
  • 1 lb. shrimp

Step 1. Place chicken in pan with some oil and stir fry until brown. Add onions, cook until transparent. Add tomatoes, green pepper and celery. Cover and cook for another 30 minutes.

Andouille Sausages are smoked, spiced pork sausages brought to Louisiana by French and German immigrants and often used in Cajun coooking.  Slice Andouille Sausages in thin slices, put aside.

Step 2. In this picture you’ll see various sources and quality levels of saffron threads.  The ones pictured in the foreground are of utmost quality, is dark, red and fragrant, and came from Iran.  The ones in the back ground, are lighter, looks almost like straw, and came from Egypt.  Not sure whether it is real saffron or not but it was sold as such, but I have my doubts.  Saffron is derived from the stigma of the Saffron Crocus flower and is often used for cooking, seasoning and as a coloring agent.

Step 3. Take 1/2 teaspoon of saffron threads and soak in hot water for 5 minutes. The color of the saffron should look like this. Save the water!

Step 4. Put ingredients into pan – saffron mixture, peas, stock or broth, thyme, red pepper, salt and rice.

Step 5. Cover and simmer for 20 minutes, or until rice is tender and cooked. Now stir in sausages and shrimp, cook for another 5 minutes. Shrimp will cook quickly and the sausages just needs to be reheated as they are already fully cooked.

Step 6. Spoon into a large serving platter or bowl. Serve!
