Mango Chutney

Make this delicious Mango Chutney as a condiment for any Pork recipe, Indian Theme Party, or as a party favor. The ginger and spices gives this chutney incredible flavor with some bite, while the fruit provides sweetness and texture. |

Mango Chutney Ingredients (serves 10)
- 2 tbs fresh lemon juice
- 1/4 cup white sugar
- 1/4 cup brown sugar
- 1/8 tsp ground cinnamon
- 1/8 tsp ground ginger
- 1/8 tsp ground allspice
- 1/8 tsp ground cloves
- 1 tsp salt
- 1 inch fresh ginger root, sliced
- 1 cup prunes, cut into small pieces
- 1/4 cup golden raisins
- 2 cups chopped mango (frozen or fresh)
- 1 cup water
- canning jars (optional for favors)
- custom label (optional for favors)
- ribbon (optional for favors)

Mango Chutney Directions
Step 1. Cut up the dried fruit and the mango. Add all dried fruit and ingredients to a medium sauce pan over medium heat.

Step 2. Use fresh lemon juice to add some tartness to the mango chutney. You can also substitute concentrated lemon juice instead, just use 2 tablespoon equivalent juice.

Step 3. Cover pan and bring chutney to boil for 15 minutes. Make sure you stir occasionally to prevent the chutney from sticking to the bottom of the pan. Simmer for for another 15 minutes on low.

Step 4. Serve chutney warm or at room temperature. Refrigerate and store chutney in clean canning jars with tight fitting lids. To use as party favors, add a custom label and decorate with raffia or pretty ribbon.
