Lentils are one of the staples of Indian Cuisine and this recipe for Curry Lentil Side Dish is a perfect make-ahead dish for an Indian Theme Party. Make this dish the day before so that the flavors have time to soak in and just warm up right before serving with a dollop of yogurt. |

Curry Lentil Side Dish Ingredients (serves 4-6)
- 1 large clove garlic
- 1 piece (1/3 inch long) fresh, peeled ginger
- 1/2 bulb of fennel, cored and cut into large chunks
- 1 small carrot, peeled and cut into large chunks
- 1 small parsnip, peeled and cut into large chunks
- 1 large shallots, cut in half
- 3 tbs. butter
- 2 tsp. curry powder
- 1 cup brown lentils, picked over and rinsed
- 1 quart chicken broth
- Salt and pepper
- Whole milk yogurt for garnish
- Chopped fresh cilantro

Curry Lentil Side Dish Directions
Step 1. Some Ingredients for the Curry Lentil Side Dish recipe – garlic, ginger, onion, carrots, brown lentils and fennel.

Step 2. Put garlic, ginger in a food processor and pulse until chopped. Add fennel, carrot, parsnip and shallots, and pulse until coarsely chopped.

Step 3. Melt 2 Tbs. of butter in a 4 qt saucepan over medium to high heat. Add the chopped vegetables from the food processor and cook, about 3 minutes until soft. Add the curry powder, cook until fragrant, about 1 minute. Add lentils, broth, and 1/4 tsp salt and 1/4 tsp pepper. Bring the lentil mixture to boil over high heat. Cover and reduce to simmer until lentils are tender, about 30 minutes.

Step 4. After simmering for 30 minutes, transfer 1 1/2 cups of the lentil mixture to a blender or food processor and puree until smooth. Transfer the puree back with the rest of the lentils. Add 1 Tbs. butter and stir. Add salt and pepper to taste. If the mixture is too thick add some water.

Step 5. Spoon Curry Lentils in a serving bowl. Add a dollop of fresh whole milk yogurt and fresh sprigs of cilantro leaves.
