Cornbread with Scallions | Mexican Theme Party

This cornbread with scallions is very moist, has a tender crumb and is a great bread to make ahead since it will still stay moist and soft when reheated. Perfect for a Tex Mex Party with Chili or for a Mexican Theme Party. |

Cornbread with Scallions Ingredients (serves
- 1 cup (4 oz) flour
- 1 cup yellow cornmeal
- 2 tsp baking powder
- 1 tsp salt
- 1 1/4 cup low fat milk
- 2 Tbs honey
- 1 large egg
- 1/3 cup oil
- 8 scallions thinly sliced (white and green parts only)
- Fresh ground black pepper

Cornbread with Scallions Directions
Step 1. Preheat oven at 400 degrees.
Step 2. In a large bowl, whisk the flour, cornmeal, baking powder, and salt.
Step 3. In a medium bowl, whisk the milk, honey, egg, oil, scallions, and some black pepper until well mixed.
Step 4. Add the milk mixture to the dry ingredients and stir with a rubber spatula until the ingredients are just blended.
Step 5. In a 10 inch skillet (ovenproof and if possible cast iron), pour in 1 tbs of oil. Heat the skillet until hot. Pour the batter mixture into hot skillet and bake in the oven until the top is golden brown, firm and springy to the touch for 20-25 minutes. When a toothpick is inserted, it should come out clean. Let cool for 5 minutes.
Step 6. Turn out onto rack and serve warm with chili, taco soup or as a side dish for Mexican Cinco De Mayo Theme Party.
