Banana Breakfast Cookies Ingredients
- 3/4 cup softened butter
- 2/3 cup sugar
- 1 large egg
- 1 1/4 cup flour
- 1/8 teaspoon salt
- 1/4 teaspoon cinnamon
- 1 1/2 cup rolled oats
- 1 cup mashed ripe banans (about 2 bananas)
- 1 cup combination of chocolate chips, dried cranberries and/or raisins)
- 1/2 cup chopped nuts (optional)
Temperature
- Oven: 375 degrees F.

Banana Breakfast Cookies Directions

Step 1. Preheat oven to 300 F degrees. In a large bowl, beat together butter and sugar until light and fluffy.

Step 2. Beat in egg. Mix together flour, salt and cinnamon.


Step 4. Stir in chocolate chips (and/or dried fruit) and nuts (optional).

Step 5. Drop by teaspoonfuls onto greased cookies sheet or use parchment sheets.

Step 6. Bake at 12-15 minutes until edges start to brown. Let cool for about 10 minutes. Serve warm!
These are always soft and moist. You can also let cool completely and wrap each one individually in wax or parchment paper for a ready-to-go snack for school, sports, work, etc.
