Sugar Cookies Dough : Ingredients
- 2 cups all-purpose flour
- 1 1/2 tsp baking powder
- 1/4 tsp salt
- 6 tbs (3/4 stick) unsalted butter, softened
- 1/3 cup (1/3 stick) shortening
- 3/4 cup granulated sugar
- 1 large egg
- 1 tbs whole milk
- 1 tsp pure vanilla extract
- Any optional flavorings if desired, like lemon-lime, cinnamon or anise.
Pencil Cookies Decorations : Ingredients
- 1 block of semi-sweet chocolate
- Several red Fruit Roll-Ups in strips
- Aluminum Foil cut into long thin strips and folded over
Sugar Cookies Dough : Directions
Step 1. Supplies needed for the sugar cookies: flour, baking powder, salt, butter, shortening, sugar, egg, milk, vanilla extract and any other optional flavorings.
Step 2 to Step 11. Follow same directions for Basic Sugar Cookie Dough Recipe.
Pencil Cookie Cutouts: To make pencil cut outs, use a sharp knife to cut out strips of dough size approx 4″ x 1″. Use the knife to cut out the corners on one end of the strip. This is the pencil tip.
Step 12. Bake cookies in the middle of oven rack for about 8 to 10 minutes on 375 F. Bake until edges are light brown. Take out of the oven and let cool on wire rack.
Once cooled, cover the body with yellow Royal icing. Place on a wire rack. Let dry and harden.
Step 13. Roll out strips of red Fruit Roll-Ups and cut into 3″ strips. Wrap the rectangle end in the Fruit Roll-Up. This will be the eraser side.
Step 14. Melt some chocolate in the microwave on low for a few seconds and stir. Continue microwaving in intervals and keep stirring until it is melted. Dip the pointed side of the cookie pencil into the chocolate. This end is the pencil tip.
Step 15. Let the pencils dry on a sheet of wax or parchment paper.
Step 16. Once the chocolate tips have dried, fold strips of aluminum foil and wrap around the end of the pencil, covering the edge of the Fruit Roll-Up.
Step 17. For the Back To School Party decorations, decorate the table with school supplies, agenda books, rulers, bright colored paper and party supplies, etc. Spread a few cookies out on the table and place them next to the rulers. Your guests will do a double take as they enter the room!
Step 18. These pencils will be a hit at your party and for once, it’s OK to bite the ends of your pencil and to chew it! Enjoy!
